Pollok's Market & Deli has been proudly family-owned and operated for five generations, rooted in a legacy of craftsmanship that began in 1854. Our tradition began when founder Marcian Pollok brought a cherished Polish sausage recipe to America, a recipe we continue to use today with unwavering dedication to quality. We specialize in producing premium sausages, smoked meats, and jerky using only lean pork and beef, with no fillers or artificial additives. Over the decades, our operations have expanded from a small butcher shop to a wholesale business serving regions from the Hill Country to the Coastal Bend area, producing over 15,000 pounds of meat weekly. Our commitment to authenticity is evident in every product, from our famous pure pork smoked sausage to our handcrafted jerky and bacon.

The Pollok family remains deeply involved in daily operations, ensuring our heritage and standards are preserved.
