Our Winemaking Philosophy

At Eristavi Winery, we're committed to producing handcrafted wines that showcase the unique characteristics of distinct California grape varietals. Our Winemaking Process

We take great pride in our traditional winemaking methods, which have been passed down through generations of Eristavis. We utilize a combination of both old-world techniques and modern technology to produce our stunning wines. Our hand-picked grapes are carefully selected and processed using traditional press and punchdown tools. We age our wine in traditional Georgian clay vessels known as Qvevri or French oak barrels, allowing the tannins to drop out and the fruit to achieve a complex flavor profile.
