Our Story

The idea for Jobell Cafe & Bistro was born out of the convergence of several passions: a love for art, culture, and cuisine; a deep appreciation for locally sourced ingredients; and years of experience in the back of house operations of various restaurants. The seeds of this idea were planted in David's childhood, as he watched his mother create delicious meals that were inspired by her art historical research. David later developed a love for cooking and honed his skills while working with chef friends in lower Manhattan.

Years later, David met Jessenia, whose culinary background was influenced by her Cuban and Chinese parents. Together, they began to visualize what their ideal restaurant might look like. After moving to the Texas Hill Country in 2013, they found the perfect location for their restaurant, which was an old building in a wooded property that needed extensive renovations. After a year of hard work, Jobell Cafe & Bistro opened its doors.

The early days of running the restaurant were filled with challenges, from menu design and staffing to building a presence in the local community. Despite the obstacles, David and Jessenia remained committed to their principles of respecting ingredients and guests while maintaining a passion for what they do.

Eight years later, Jobell Cafe & Bistro has become a beloved fixture in the Wimberley community, known for its bold flavors and commitment to locally sourced ingredients. While the final result may sometimes look different from the original idea, the end product is often better than what could have been anticipated.
