Wild Leaven Bakery is a small family-owned and operated business that specializes in long fermentation artisan sourdough bread and baked goods using organic, local grains and ingredients. Our mission is to strengthen our strong local food economy by supporting farmers and ranchers located in the Northern New Mexico and Southern Colorado bioregion, while giving priority to heritage and heirloom grains. We serve our offerings to our valued customers on a first come first serve basis.

Our Services

We offer a variety of sourdough bread and baked goods that are made using a long fermentation process. This process involves the use of wild yeast and bacteria, which gives our products a unique flavor and texture. Our offerings include a range of breads, soups, stews, gluten-free food items, pastries, and sweets. We also have a selection of seasonal items that are available at our shops and the Taos Farmers Market.

Why Sourdough?

Sourdough bread is at the heart of our bakery. The long fermentation process involves the use of wild yeast and bacteria, which gives our products a unique flavor and texture. This process also breaks down anti-nutrients in grains like phytic acid, making our bread easier to digest. Additionally, the longer shelf life of sourdough bread means that it can be enjoyed for longer periods of time.

Our Locations and Hours

We have two shops located in Taos and Santa Fe, where our offerings are available. Our shops are open Wednesday through Saturday from 8:00am to 2:00pm. We also have a booth at the Taos Farmers Market on Saturdays from 8:00am to 12:30pm. Prepaid preorders are available at our Taos and SF shops ONLY, but we do not offer shipping.
