The Uniqueness of Le Cuvier Wine
Le Cuvier Winery is located in the heart of Paso Robles, California, and is renowned for its unique approach to winemaking. At Le Cuvier, we believe that yeast and other wine pathogens thrive and create the most interesting wines when given an engaging environment to work in. That's why we let the wild yeasts and natural fermentation process take center stage, with minimal human intervention.
We practice exclusive wild yeast fermentation and use dry-farmed fruit wherever possible to create our deep, intense, and opaque wines. Our wines are aged for a minimum of 33 months in neutral oak, resulting in complex flavors and aromas, and wines that are incredibly age-worthy.
The Elliptical Society
Our wine club, the Elliptical Society, is not just a marketing afterthought. It's the very reason for our winery's existence. Our wines are made exclusively for our Elliptical Members, who are adventurous individuals willing to delve into the mysteries of life's wonders while exploring the intrigue of the ellipse. Our club members are the first to know about our new wine releases and have access to exclusive events and offerings.
The Elliptical Society is named after the elliptical shape of yeast cells, which are the primary movers in the evolution of grape juice into wine. We believe that the ellipse is the natural shape of creativity and the perfect name for our wine club.
Our Vineyards
Our grapes come from gnarly limestone vineyards in the hills west of Paso Robles, where the yield is unreasonably low, and the resultant wines reflect the essence of individuality and intense character. Our grapes grow up rough and live hard, producing wines that are a true expression of the terroir and the vintage.
