Founded by Mathieu Choux, a French baker from Burgundy, Gaston's Bakery has evolved into a national brand, renowned for its high-quality, artisanal breads and croissants. With a commitment to using only the finest ingredients, locally sourced whenever possible, Gaston's Bakery has established itself as a leader in the artisanal baking industry.

Our Story

Mathieu Choux's journey began in 2001, when he opened Le Cafe de Paris in downtown Boise, offering fresh croissants, breads, and a full daily dine-in menu. The cafe quickly gained popularity, and in response to the demand from local restaurants, Gaston's Bakery expanded its wholesale baking options in 2006. Mathieu closed Le Cafe de Paris and focused exclusively on Gaston's Bakery, catering to the Treasure Valley.

In recent years, Mathieu took his expertise to the next level by establishing a flour mill on-site. This mill uses a specialized UNIFINE mill to process local wheat, maintaining the integrity of the flour and producing a high-quality, nutritious product. Gaston's Bakery remains committed to using locally sourced ingredients, supporting the local community.

Our Services

Gaston's Bakery offers a range of services, catering to various needs. With our main bakery located on the Bench, we welcome customers to visit our shop, seven days a week from 9am to 2pm. Explore our menu, featuring freshly baked breads and croissants, as well as our core product, flour.

Wholesale

Gaston's Bakery provides daily deliveries of fresh baked goods to restaurants, coffee shops, breweries, supermarkets, and hotels. We cater to businesses seeking high-quality, locally sourced products to create exceptional guest experiences. Our wholesale menu is available for ordering, with daily deliveries starting at 6:00am.
