Our Story
Vyne Restaurant & Bar is more than just a place to eat; it's a testament to the Yimoyines family's dedication to their hometown of Middlebury, Connecticut, and their rich culinary heritage. This story began in 2009 when Dr. Dean Yimoyines and his family opened Middlebury Consignment, a unique furniture showroom and gift shop seamlessly blending style and functionality. As their establishment quickly became a beloved local destination, the family recognized the need for a welcoming space for their customers to enjoy a meal. Thus, a simple cafe was born, gradually evolving into the acclaimed fine-dining experience that Vyne has become today.
With the opening of Vyne, the Yimoyines family returns to their roots. Dr. Yimoyines' father, Constantine, owned the iconic Les Shaw's, a beloved restaurant that remains fondly remembered throughout Greater New Haven. Vyne echoes this legacy, offering a classic yet inventive menu that has garnered its fair share of accolades and loyal patrons.
Meet Our Team
At the heart of Vyne's success lies a dedicated team of culinary professionals united by a passion for creating exceptional dining experiences. Leading the charge is Culinary Director and Executive Chef Calin Sauvron. A culinary artist born and raised in Connecticut, Calin brings a dynamic flair and extensive experience to the Vyne table. Her journey began at the renowned Carmen Anthony's, a testament to her inherent talent that propelled her swift ascent through the ranks. She further honed her skills at the popular At the Corner in Litchfield, eventually assuming the role of Executive Chef. Calin was instrumental in the development and growth of the Note Restaurant Group in Bethel, which includes Note Kitchen and Bar, Notch 8 Bar and Grill, and Fat Tony's Deli and Pizzeria. Her expertise even extended to the world of craft brewing through her involvement with Reverie Brewing in Newtown.
Calin's crowning achievement was her victory on the Food Network's hit cooking competition, Chopped, where she bested three other talented chefs. Her creativity, innovative spirit, and penchant for crafting deeply flavorful dishes make her an invaluable asset to the Vyne team, ensuring a bright and exciting future for the restaurant.
