Nighthawk Vineyard & Winery

NightHawk Winery, a vineyard and winery located in the charming town of Paola, Kansas, is the result of a journey that began over 20 years ago. Founders Don and Cathy, seeking a change of pace from their city lives, moved to the countryside and began building a straw-bale home using recycled materials. Inspired by Don's time in Tuscany, they envisioned a space where they could enjoy life through food, wine, and friends, much like the Old World. This vision soon expanded to include a vineyard, and in 2001, they planted their first grape vines, reflecting the beauty and vitality of their favorite wine-growing regions: Italy, France, Spain, and Portugal.

Today, NightHawk Winery boasts over 3600 on-site plantings and uses a variety of unique grapes to create wines that express the terroir of eastern Kansas. From Beaujolais-style young blushes to red wines aged in oak, NightHawk offers a diverse range of wines for every palate. The winery's mission is to create unique and sustainable moments using local resources, and to help visitors savor the best of Kansas wines and moments.

Our Wines

NightHawk Winery's wines are hand-crafted using varietals grown on the estate and complemented by other local vineyards. The winery offers a selection of dry wines, including the crisp and citrusy Vidal Blanc, the full-bodied and fruity Vignoles Dry, and the earthy Seyval Blanc. For those who prefer a touch of sweetness, the Traminette offers exotic aromas of orange peel and pear, while the Noiret boasts a bold and spicy flavor profile.

Our Music

In addition to its wines, NightHawk Winery hosts a music series each Saturday from 2-5pm, beginning in April. The winery's pastoral country setting and laid-back vibe make it the perfect place to enjoy live music and locally produced wines.
