Our Story
At Coava Coffee Roasters, we are dedicated to crafting exceptional specialty coffee that delights the senses. Our journey began in 2008, when our founder, Matt Higgins, started roasting coffee in his North Portland garage. With a passion for specialty coffee, Matt bootstrapped the company by repairing motorcycles to start his dream of roasting and preparing coffees that would excite professional baristas and make it accessible to everyday drinkers.
Sourcing
We are committed to long-term, sustainable partnerships with coffee producers. We believe that obtaining high-scoring green coffee is just the beginning. We are dedicated to a sourcing model that is not only good for farmers but is good for the specialty coffee industry as a whole. We recognize that it is the growers, not us, who determine a coffee's potential, and we are honored to work with producers who take such pride in their work.

We're dedicated to refining every area of our craft, from traveling to farms around the world to developing roast profiles and logging hours behind the espresso machine.

In the end, it's all about people. The relationships we have with coffee farmers, importers, wholesale partners, customers, and coworkers make it all worth it. We never forget how fortunate we are to get to work with the coffees we have and love being able to share them with you. We invite our customers, who quickly become friends, to try our coffees, hang out in our cafes, and laugh with our baristas - it's what brings us the greatest joy.

At Coava Coffee Roasters, we're proud to have three unique locations in Portland, Oregon. Our Flagship cafe is a place to experience our craft and hospitality in its purest form. Our Coava Espresso Bar is a beloved neighborhood spot where community comes alive. The Public Brew Bar & Roastery is a unique cafe located inside our roastery, offering a front-row seat to where all the magic happens.
